A Few Of Our Favorite Paleo Recipes For Spring & Summer

After a long and gorgeous winter here in Bend, Oregon, the Paleo Eats team is ready to embrace the onset of Central Oregon spring. And with that, we’re also ready to start getting into some of our favorite paleo recipes, particularly the ones that pair well with warmer weather accoutrements. Like watermelon salad and peach-colored flip flops, Latin surf/turf and summer dresses, or grilled rainbow carrots and your favorite bathing suit.

Grilled Watermelon Salad - Paleo Style

One of our most favorite paleo recipes for this time of year, or any time of year really, comes from A Whole New Twist. This grilled watermelon salad takes a traditional watermelon salad and, well, puts a little twist on it by adding a bed of fresh arugula and some grilled shrimp. Here’s why we love this tasty mess of watermelon and shrimp:   

  • Watermelon isn’t only delicious, it’s also a great way to stay hydrated, especially come the drier months of summer. Being 92% water and full of key vitamins and minerals, as well as some electrolytes, watermelons are a one sweet way to keep your system feeling good.
  • Arugula is a spicy mustard green that adds a bit of kick and a bit of fiber to anything. It also contains a bunch of folic acid, as well as antioxidants like vitamin C, K, and A.
  • Shrimp are rich in protein and key nutrients, including selenium and astaxanthin. They also carry a ton of B12, phosphorous, and other important nutrients that are beneficial to thyroid function. 

Grilled Rainbow Carrots With Basil Vinaigrette

  • Rainbow Carrots
  • Basil   
  • Avocado Oil
  • Apple Cider Vinegar
  • Salt & Pepper
  • Olive Oil
