Grilled Watermelon Salad - Paleo Style
One of our most favorite paleo recipes for this time of year, or any time of year really, comes from A Whole New Twist. This grilled watermelon salad takes a traditional watermelon salad and, well, puts a little twist on it by adding a bed of fresh arugula and some grilled shrimp. Here’s why we love this tasty mess of watermelon and shrimp:
- Watermelon isn’t only delicious, it’s also a great way to stay hydrated, especially come the drier months of summer. Being 92% water and full of key vitamins and minerals, as well as some electrolytes, watermelons are a one sweet way to keep your system feeling good.
- Arugula is a spicy mustard green that adds a bit of kick and a bit of fiber to anything. It also contains a bunch of folic acid, as well as antioxidants like vitamin C, K, and A.
- Shrimp are rich in protein and key nutrients, including selenium and astaxanthin. They also carry a ton of B12, phosphorous, and other important nutrients that are beneficial to thyroid function.
