Paleo Eats evolved from my own primal impulse toward health and wellness, as well as a hunger for dietary solutions. As an MRI Technologist, CrossFit enthusiast, and lifelong nutrition devotee, I have been dedicated to wellbeing and fitness my entire life. It wasn’t until after my three children were born that this dedication kicked into high gear.
I gave up dairy while breastfeeding in order to alleviate my daughter’s colic. After my son was born I continued to eat dairy-free. But when he still showed signs of painful food allergies we decided to undergo months of costly testing that eventually revealed an intolerance to gluten. During my third pregnancy I avoided all dairy and gluten--lo and behold, my third child thrived. At this point the writing was on the wall. We clearly needed to move beyond a typical American diet and onto a more wholesome menu of clean, easy-to-digest foods.
I began baking nutritious and tasty dairy- and gluten-free treats for my family. As more people learned about the benefits of a Paleo lifestyle and tasted my delicious Paleo-friendly bars, I started offering specialty baked goods to the public. In 2012, Paleo Eats was born.
